Description

Ingredients

  • 1 large ripe avocado, mashed
  • ½ cup of frozen or canned corn, thawed if frozen
  • ¼ cup of finely chopped red onion
  • ¼ cup of fresh cilantro, chopped
  • 1 tablespoon of freshly squeezed lime juice
  • ½ teaspoon of cumin powder
  • ¼ teaspoon of chili powder
  • Salt and black pepper, to taste
  • 4 large (10-inch) flour tortillas (whole wheat or gluten-free options available)

Instructions

  1. In a medium mixing bowl, mash the ripe avocado using a fork.
  2. Mix in the freshly squeezed lime juice until well combined.
  3. Fold in the rinsed black beans, corn, chopped red onion, and cilantro gently.
  4. Season the mixture with cumin, chili powder, salt, and black pepper; adjust seasoning as needed.
  5. Warm the tortillas in a dry skillet or microwave.
  6. Lay a tortilla flat, spoon a quarter of the filling into the center, and roll it up snugly.
  7. Enjoy immediately, whole or cut in half diagonally.

Notes

Store extra burritos in an airtight container in the fridge for up to 2 days or freeze for up to 3 months. Warm in a microwave or skillet before serving.
