- 1 (15-ounce) can of black beans, rinsed and drained
- 1 large ripe avocado, mashed
- ½ cup of frozen or canned corn, thawed if frozen
- ¼ cup of finely chopped red onion
- ¼ cup of fresh cilantro, chopped
- 1 tablespoon of freshly squeezed lime juice
- ½ teaspoon of cumin powder
- ¼ teaspoon of chili powder
- Salt and black pepper, to taste
- 4 large (10-inch) flour tortillas (whole wheat or gluten-free options available)
Instructions
- In a medium mixing bowl, mash the ripe avocado using a fork.
- Mix in the freshly squeezed lime juice until well combined.
- Fold in the rinsed black beans, corn, chopped red onion, and cilantro gently.
- Season the mixture with cumin, chili powder, salt, and black pepper; adjust seasoning as needed.
- Warm the tortillas in a dry skillet or microwave.
- Lay a tortilla flat, spoon a quarter of the filling into the center, and roll it up snugly.
- Enjoy immediately, whole or cut in half diagonally.
Notes
Store extra burritos in an airtight container in the fridge for up to 2 days or freeze for up to 3 months. Warm in a microwave or skillet before serving.
