- 1 (15-ounce) can of Black Beans, rinsed and drained
- 1 large ripe Avocado
- ½ cup of Frozen or Canned Corn
- ¼ cup of finely chopped Red Onion
- ¼ cup of fresh Cilantro
- 1 tablespoon of Lime Juice
- ½ teaspoon of Cumin Powder
- ¼ teaspoon of Chili Powder
- Salt and Black Pepper, to taste
- 4 large (10-inch) Flour Tortillas
Instructions
- In a medium bowl, mash the ripe avocado to your desired texture.
- Stir in the lime juice to keep the avocado fresh.
- Add the rinsed black beans, corn, chopped red onion, and cilantro to the bowl.
- Sprinkle in the cumin, chili powder, salt, and pepper. Mix gently, ensuring to keep some beans whole.
- Optional: Warm the tortillas for easier rolling.
- Lay a tortilla flat, add about a quarter of the filling, and shape it into a log.
- Fold in the sides and roll up the burrito snugly.
- Repeat with the remaining tortillas and filling. Serve immediately.
Notes
For best results, always use a ripe avocado and adjust spices to your taste preferences. These wraps can be served with salsa or guacamole.
