Description

Quick and delicious Vegan Burrito Wraps packed with black beans, avocado, and fresh veggies, ready in just 10 minutes.


Ingredients

  • 1 (15-ounce) can of Black Beans, rinsed and drained
  • 1 large ripe Avocado
  • ½ cup of Frozen or Canned Corn
  • ¼ cup of finely chopped Red Onion
  • ¼ cup of fresh Cilantro
  • 1 tablespoon of Lime Juice
  • ½ teaspoon of Cumin Powder
  • ¼ teaspoon of Chili Powder
  • Salt and Black Pepper, to taste
  • 4 large (10-inch) Flour Tortillas

Instructions

  1. In a medium bowl, mash the ripe avocado to your desired texture.
  2. Stir in the lime juice to keep the avocado fresh.
  3. Add the rinsed black beans, corn, chopped red onion, and cilantro to the bowl.
  4. Sprinkle in the cumin, chili powder, salt, and pepper. Mix gently, ensuring to keep some beans whole.
  5. Optional: Warm the tortillas for easier rolling.
  6. Lay a tortilla flat, add about a quarter of the filling, and shape it into a log.
  7. Fold in the sides and roll up the burrito snugly.
  8. Repeat with the remaining tortillas and filling. Serve immediately.
