Ingredients
- Canned chicken (15 oz)
- Egg noodles (2 cups)
- Low-sodium chicken broth (6 cups)
- Carrots, sliced (1 cup)
- Celery, chopped (1 cup)
- Onion, diced (1 small)
- Garlic, minced (2 cloves)
- Olive oil (2 tablespoons)
- Salt and pepper (to taste)
- Fresh parsley (for garnish, optional)
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion, garlic, carrots, and celery. Sauté for about 3-4 minutes until the vegetables soften.
- Pour in the chicken broth and bring it to a gentle boil.
- Add the egg noodles and the canned chicken (drained). Let this all simmer for about 5-7 minutes, or until the noodles are cooked to your liking.
- Season with salt and pepper to taste. Remove from heat.
- Garnish with fresh parsley before serving.
