Ingredients

  • 1¾ cups water
  • 4 cups all-purpose flour
  • 2 tbsp soy sauce (for flavor)
  • 6 cups vegetable broth (seasoned to taste)
  • 1 tsp garlic powder
  • 2 tsp onion powder

Instructions

  1. In a large bowl, combine the flour and 1¾ cups of water. Stir until a shaggy dough forms.
  2. Knead the dough on a clean surface for about 8–10 minutes, adding extra flour if it feels sticky.
  3. Place the dough in fresh water and let it rest for 1–2 hours.
  4. After resting, squeeze and rinse the dough underwater until it becomes soft and elastic.
  5. Form the dough into a braid or knot, and simmer it in vegetable broth seasoned with garlic and onion powder for 1 hour, flipping halfway through.
  6. Cool in the broth and then shred with forks as desired.

Notes

Store leftovers in broth for up to 7 days in the refrigerator, or freeze for longer storage.
