Ingredients

- 1¾ cups water
- 4 cups all-purpose flour
- 2 tbsp soy sauce (for flavor)
- 6 cups vegetable broth (seasoned to taste)
- 1 tsp garlic powder
- 2 tsp onion powder
Instructions
- In a large bowl, combine the flour and 1¾ cups of water. Stir until a shaggy dough forms.
- Knead the dough on a clean surface for about 8–10 minutes, adding extra flour if it feels sticky.
- Place the dough in fresh water and let it rest for 1–2 hours.
- After resting, squeeze and rinse the dough underwater until it becomes soft and elastic.
- Form the dough into a braid or knot, and simmer it in vegetable broth seasoned with garlic and onion powder for 1 hour, flipping halfway through.
- Cool in the broth and then shred with forks as desired.
Notes
Store leftovers in broth for up to 7 days in the refrigerator, or freeze for longer storage.
