Ingredients

  • 46 cups fresh or frozen fruit (600700 g) – berries, mango, peaches, or a blend of your choice
  • 46 tablespoons honey (or substitute with sugar or a sugar alternative)
  • 4 tablespoons lemon juice (60 mL)

Instructions

  1. Prepare the Fruit: Start by washing, peeling, and chopping your fruits as required.
  2. Blend: Place the chopped fruit in a blender and purée until smooth.
  3. Add Sweeteners: Mix in honey and lemon juice, then blend again until everything is well combined.
  4. Simmer: Pour the mixture into a saucepan and let it simmer on low heat for about 15–20 minutes, stirring frequently until the mixture thickens slightly.
  5. Spread: Line two baking sheets with parchment or silicone mats. Spread the fruit mixture evenly onto each sheet to about 1/8 inch thickness.
  6. Bake: Preheat your oven to 170°F (75°C) and bake the fruit mixture for 4–6 hours, or until it’s no longer sticky but still pliable.
  7. Cool and Roll: Let the fruit roll-ups cool completely. Cut them into strips and roll them up with parchment paper for easy snack access!

Notes

Store in an airtight container at room temperature or in the fridge for up to two weeks. Freeze for longer storage, separating each roll with parchment paper.
