Description

A delicious and quick breakfast sandwich featuring toasted brioche, creamy Gouda, and fresh avocado, perfect for busy mornings.


Ingredients

  • 2 brioche toasts
  • 2 eggs
  • 1 slice of Gouda cheese
  • A handful of cherry tomatoes, sliced
  • 1/2 avocado, sliced
  • A handful of iceberg lettuce
  • Salt and pepper, to taste
  • Butter or oil for cooking

Instructions

  1. Toast the brioche slices until golden brown.
  2. In a skillet, heat a small amount of butter or oil over medium heat.
  3. Crack the eggs into the skillet and cook to your liking—sunny-side up, scrambled, or over-easy.
  4. Once the eggs are nearly done, place a slice of Gouda cheese on top to melt slightly.
  5. Layer avocado slices, cherry tomatoes, and lettuce on one piece of toasted brioche. Top with the cheesy eggs.
  6. Add the other slice of toasted brioche on top, cut in half if desired, and serve immediately.

Notes

For a spicy kick, add a drizzle of sriracha or red pepper flakes. Best served fresh, but leftovers can be kept in the fridge for up to a day.
