A delicious and quick breakfast sandwich featuring toasted brioche, creamy Gouda, and fresh avocado, perfect for busy mornings.
Ingredients

- 2 brioche toasts
- 2 eggs
- 1 slice of Gouda cheese
- A handful of cherry tomatoes, sliced
- 1/2 avocado, sliced
- A handful of iceberg lettuce
- Salt and pepper, to taste
- Butter or oil for cooking
Instructions
- Toast the brioche slices until golden brown.
- In a skillet, heat a small amount of butter or oil over medium heat.
- Crack the eggs into the skillet and cook to your liking—sunny-side up, scrambled, or over-easy.
- Once the eggs are nearly done, place a slice of Gouda cheese on top to melt slightly.
- Layer avocado slices, cherry tomatoes, and lettuce on one piece of toasted brioche. Top with the cheesy eggs.
- Add the other slice of toasted brioche on top, cut in half if desired, and serve immediately.
Notes
For a spicy kick, add a drizzle of sriracha or red pepper flakes. Best served fresh, but leftovers can be kept in the fridge for up to a day.
