Instructions

  1. In a large pot, heat a splash of oil over medium heat. Sauté the chopped onion, minced garlic, and grated ginger until fragrant, about 3–5 minutes.
  2. Stir in the diced sweet potatoes, vegetable broth, cumin, paprika, salt, and pepper. Bring everything to a boil, then reduce the heat to low. Let it simmer for about 20 minutes, or until the sweet potatoes are fork-tender.
  3. Add the peanut butter to the pot. Stir until it melts and is well-combined with the soup.
  4. Using an immersion blender, puree the soup until it is smooth. Taste and adjust the seasoning if needed.
  5. Serve hot, garnished with fresh cilantro and a sprinkle of chili flakes for a spicy kick if desired.
