- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 4 cups vegetable broth
- 1/2 cup peanut butter (smooth or crunchy)

- 1 teaspoon paprika
- Salt and pepper to taste

Instructions
- In a large pot, heat a splash of oil over medium heat. Sauté the chopped onion, minced garlic, and grated ginger until fragrant, about 3–5 minutes.
- Stir in the diced sweet potatoes, vegetable broth, cumin, paprika, salt, and pepper. Bring everything to a boil, then reduce the heat to low. Let it simmer for about 20 minutes, or until the sweet potatoes are fork-tender.
- Add the peanut butter to the pot. Stir until it melts and is well-combined with the soup.
- Using an immersion blender, puree the soup until it is smooth. Taste and adjust the seasoning if needed.
- Serve hot, garnished with fresh cilantro and a sprinkle of chili flakes for a spicy kick if desired.
