Description

Light and chewy almond-flavored cookies made with almond flour, perfect for any occasion.


Ingredients

  • 2 cups almond flour
  • 1 cup sugar
  • 3 egg whites
  • 1/2 teaspoon vanilla extract
  • A pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together the almond flour and sugar until well combined.
  3. In a separate bowl, beat the egg whites with a mixer until soft peaks form.
  4. Gently fold the egg whites into the almond mixture until fully combined.
  5. Add the vanilla extract and a pinch of salt, mixing until just incorporated.
  6. Using a tablespoon, scoop the dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes or until the edges become lightly golden.
  8. Allow them to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Store in an airtight container at room temperature for up to five days or freeze for longer storage. Experiment with flavors by adding spices or chocolate.
