Ingredients

- 2 cups almond flour
- 1/4 cup granulated sweetener (like erythritol or monk fruit)
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 1/2 cup chopped nuts or chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C) and prepare a baking sheet with parchment paper.
- In a mixing bowl, combine almond flour, sweetener, baking powder, and salt.
- In a second bowl, whisk together eggs, vanilla extract, and almond extract until well blended.
- Combine the wet ingredients with the dry ones, mixing until a dough forms. If desired, fold in the optional nuts or chocolate chips.
- Shape the dough into a 12-inch log and place it on the prepared baking sheet.
- Bake for 25-30 minutes, until the log is golden and firm.
- Allow it to cool for 10 minutes before slicing it into individual biscotti pieces and arranging them flat on the baking sheet.
- Return to the oven for an additional 10-15 minutes until they are crisp.
- Let them cool completely before enjoying!
Notes
Store biscotti in an airtight container for up to two weeks. For longer storage, freeze the uncooked log and bake directly from the freezer.
