Delicious gluten-free almond flour cookies with rich flavors of almond, dark chocolate, and walnuts.

- 1½ cups finely ground almond flour
- ½ tsp baking powder
- ¼ tsp baking soda
- ¼ tsp sea salt
- ½ tsp ground cinnamon
- 1 large egg (lightly beaten)
- ¼ cup unsalted butter or coconut oil (melted)
- 3 Tbsp pure maple syrup
- 1 tsp pure vanilla extract
- ½ cup dark chocolate chips
- 2/3 cup raw walnuts (chopped)
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, stir together the almond flour, baking powder, baking soda, sea salt, and cinnamon until well combined.
- In another bowl, whisk together the beaten egg, melted butter (or coconut oil), pure maple syrup, and vanilla extract until smooth.
- Pour the dry ingredients into the wet mixture and stir until just combined. The dough will be quite sticky—that’s perfectly normal!
- Gently fold in the dark chocolate chips and chopped walnuts, ensuring they are evenly distributed in the dough.
- Use a spoon to scoop mounds of the dough onto a non-stick baking sheet. Mold them into your desired form.
- Bake for 8 to 12 minutes, usually 10 minutes for golden-brown edges.
- Cool on the baking sheet for a couple of minutes before transferring them to a wire rack to complete cooling.
Notes
These cookies can be stored in an airtight container at room temperature for up to a week, or frozen for up to three months.
