Description

Delicious gluten-free almond flour cookies with rich flavors of almond, dark chocolate, and walnuts.


Ingredients

  • 1½ cups finely ground almond flour
  • ½ tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp sea salt
  • ½ tsp ground cinnamon
  • 1 large egg (lightly beaten)
  • ¼ cup unsalted butter or coconut oil (melted)
  • 3 Tbsp pure maple syrup
  • 1 tsp pure vanilla extract
  • ½ cup dark chocolate chips
  • 2/3 cup raw walnuts (chopped)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, stir together the almond flour, baking powder, baking soda, sea salt, and cinnamon until well combined.
  3. In another bowl, whisk together the beaten egg, melted butter (or coconut oil), pure maple syrup, and vanilla extract until smooth.
  4. Pour the dry ingredients into the wet mixture and stir until just combined. The dough will be quite sticky—that’s perfectly normal!
  5. Gently fold in the dark chocolate chips and chopped walnuts, ensuring they are evenly distributed in the dough.
  6. Use a spoon to scoop mounds of the dough onto a non-stick baking sheet. Mold them into your desired form.
  7. Bake for 8 to 12 minutes, usually 10 minutes for golden-brown edges.
  8. Cool on the baking sheet for a couple of minutes before transferring them to a wire rack to complete cooling.

Notes

These cookies can be stored in an airtight container at room temperature for up to a week, or frozen for up to three months.
