- 2 ½ cups finely ground almond flour
- 1 teaspoon baking powder
- ¼ teaspoon salt
- ½ cup unsalted butter, softened
- ½ cup granulated sugar or coconut sugar
- 1 large egg
- 1 teaspoon pure vanilla extract
- 2 tablespoons almond milk or regular milk (if needed)
- 2 tablespoons granulated sugar (for sprinkles, optional)
- ½ teaspoon cinnamon (if desired)
Instructions
- Preheat the oven to 350°F (175°C) and prepare an 8×8-inch baking pan with parchment paper or grease with butter.
- In a medium bowl, mix together the almond flour, baking powder, and salt.
- In a separate bowl, cream the softened butter and sugar until light and fluffy, about 3-4 minutes.
- Add the egg and vanilla, mixing until smooth.
- Gradually add the dry ingredients to the wet mixture, stirring until a dough forms. Add milk if too thick.
- Spread the dough evenly into the prepared pan.
- If desired, sprinkle sugar and cinnamon on top.
- Bake for 18-22 minutes or until golden edges and a toothpick comes out clean.
- Cool for 10 minutes in the pan, then transfer to a wire rack to cool completely before cutting into bars.
Notes
Serve with vanilla ice cream or crumble over yogurt for breakfast. Store in an airtight container for up to a week.
