Ingredients

  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar or coconut sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 2 tablespoons almond milk or regular milk (if needed)
  • 2 tablespoons granulated sugar (for sprinkles, optional)
  • ½ teaspoon cinnamon (if desired)

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare an 8×8-inch baking pan with parchment paper or grease with butter.
  2. In a medium bowl, mix together the almond flour, baking powder, and salt.
  3. In a separate bowl, cream the softened butter and sugar until light and fluffy, about 3-4 minutes.
  4. Add the egg and vanilla, mixing until smooth.
  5. Gradually add the dry ingredients to the wet mixture, stirring until a dough forms. Add milk if too thick.
  6. Spread the dough evenly into the prepared pan.
  7. If desired, sprinkle sugar and cinnamon on top.
  8. Bake for 18-22 minutes or until golden edges and a toothpick comes out clean.
  9. Cool for 10 minutes in the pan, then transfer to a wire rack to cool completely before cutting into bars.

Notes
