- 1 cup gluten-free flour
- 1 cup powdered sugar
- 1/2 cup butter, softened
- 2 large eggs

Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine softened butter and powdered sugar until creamy.
- Add in the almond paste, breaking it apart with your hands as you mix until fully incorporated.
- Beat in the eggs, one at a time, followed by the vanilla extract until the mixture is smooth.
- Gradually add the gluten-free flour, mixing just until combined.
- Scoop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them out a few inches apart.
- Bake for 12-15 minutes or until the edges are lightly golden.
- Cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
