Ingredients

  • 1 cup almond paste
  • 1 cup gluten-free flour
  • 1 cup powdered sugar
  • 1/2 cup butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine softened butter and powdered sugar until creamy.
  3. Add in the almond paste, breaking it apart with your hands as you mix until fully incorporated.
  4. Beat in the eggs, one at a time, followed by the vanilla extract until the mixture is smooth.
  5. Gradually add the gluten-free flour, mixing just until combined.
  6. Scoop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them out a few inches apart.
  7. Bake for 12-15 minutes or until the edges are lightly golden.
  8. Cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
