- 2 cups applesauce
- 1 cup sugar
- 1 cup brown sugar
- 1/2 cup vegetable oil
- 2 eggs
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 cup chopped nuts (optional)
- 1/2 cup raisins (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- In a large mixing bowl, combine applesauce, sugar, brown sugar, vegetable oil, and eggs. Mix until well incorporated.
- In another bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the wet mixture and stir until combined. Don’t forget to add the vanilla, and feel free to fold in nuts and raisins if you’re using them.
- Pour the batter into the prepared pan and spread it evenly.
- Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Let cool in the pan for a few minutes before transferring to a wire rack to cool completely.
Notes
For best results, serve with whipped cream or vanilla ice cream. Store leftovers in an airtight container at room temperature for up to three days, or freeze for up to three months.
