- ½ cup softened butter (salted)
- ¾ cup granulated sugar
- ¼ cup packed brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup buttermilk (or regular milk with vinegar)
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- ⅓ cup sugar (for cinnamon sugar mixture)
- 1 ½ teaspoons cinnamon
- 2 tablespoons melted butter (for drizzling)
Instructions
- Preheat your oven to 350ºF and grease a 9×5 loaf pan.
- In a large mixing bowl, cream the softened butter using a hand mixer.
- Add granulated and brown sugar; mix until light and fluffy (about 2-3 minutes).
- Add the egg, vanilla, and buttermilk, mixing until fully combined.
- Sift together the flour and baking soda; gently fold into the mixture.
- In a small bowl, mix sugar and cinnamon for the cinnamon sugar mixture.
- Pour half the batter into the loaf pan, sprinkle half of the cinnamon sugar mixture, and swirl with a knife.
- Layer the remaining batter and cinnamon sugar, swirling again with a knife.
- Drizzle melted butter over the top.
- Bake for 50-70 minutes, until a toothpick comes out clean.
- Let the loaf cool for 20 minutes before transferring to a wire rack to cool completely.
Notes
Pairs well with coffee or tea. Can be stored at room temperature for 3-4 days or frozen for 2-3 months.
