Amish Cinnamon Bread

Ingredients

  • 1 cup butter, softened
  • 2 cups granulated sugar
  • 2 eggs
  • 2 cups buttermilk
  • 4 cups all-purpose flour
  • 2 teaspoons baking soda
  • 2/3 cup brown sugar
  • 2 tablespoons ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9×5-inch loaf pans.
  2. Cream together the softened butter and sugar until it’s light and fluffy, about 3-5 minutes.
  3. Beat in the eggs one at a time, mixing well after each addition.
  4. Gradually stir in the buttermilk until fully combined.
  5. Whisk together the flour and baking soda in a separate bowl.
  6. Slowly add the dry mixture to the wet batter, mixing just until combined.
  7. Mix together the brown sugar and cinnamon for the swirl.
  8. Pour about 1/4 of the batter into each prepared pan and sprinkle with 1/4 of the cinnamon mixture.
  9. Add the remaining batter to the pans and top with the rest of the cinnamon-sugar mixture.
  10. Swirl through the batter with a knife to create a marbled effect.
  11. Bake for 45-50 minutes, or until a toothpick comes out clean.
  12. Let the loaves cool in the pans for 10 minutes before transferring to a wire rack to cool completely.

Notes

Best served with butter or cream cheese. For longer storage, freeze individual slices wrapped in foil.
