Ingredients

  • 1 tsp vanilla extract
  • 2 1/4 cups all-purpose flour

  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 1 cup diced apples
  • 1/2 cup powdered sugar (for glaze)
  • 12 tbsp apple cider (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add the egg, vanilla extract, and apple cider, blending until smooth.
  4. In another bowl, whisk the flour, baking soda, cinnamon, nutmeg, and salt.
  5. Gradually blend the dry ingredients into the wet mixture until just combined.
  6. Fold in the diced apples evenly.
  7. Drop dough onto the prepared baking sheet and bake for 10–12 minutes or until the edges are golden.
  8. Let the cookies cool on a wire rack before drizzling with apple cider glaze.

Notes

For added texture, consider adding nuts or oats. Store cookies in an airtight container for up to a week or freeze for up to three months.
