- 1 cup unsalted butter (softened)
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1 large egg
- 1/4 cup apple cider
- 1 tsp vanilla extract
- 2 1/4 cups all-purpose flour
- 1/2 tsp baking soda
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp salt
- 1 cup diced apples
- 1/2 cup powdered sugar (for glaze)
- 1–2 tbsp apple cider (for glaze)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Add the egg, vanilla extract, and apple cider, blending until smooth.
- In another bowl, whisk the flour, baking soda, cinnamon, nutmeg, and salt.
- Gradually blend the dry ingredients into the wet mixture until just combined.
- Fold in the diced apples evenly.
- Drop dough onto the prepared baking sheet and bake for 10–12 minutes or until the edges are golden.
- Let the cookies cool on a wire rack before drizzling with apple cider glaze.
Notes
For added texture, consider adding nuts or oats. Store cookies in an airtight container for up to a week or freeze for up to three months.
