  • 1/4 teaspoon salt
  • 1 tablespoon vegetable oil (plus more for cooking)
  • Optional: Chopped nuts or raisins

Instructions

  1. In a bowl, whisk together the flour, baking powder, cinnamon, and salt until evenly mixed.
  2. In another bowl, combine the yogurt, milk, egg, sugar, and vegetable oil. Stir until smooth and well-blended.
  3. Fold the grated apple into the wet mixture, ensuring it’s distributed evenly.
  4. Gradually add the wet mixture to the dry ingredients. Mix gently until just combined; it’s fine if there are a few lumps.
  5. Preheat a non-stick skillet or griddle over medium heat and lightly grease it with vegetable oil.
  6. Pour 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface, about 2-3 minutes.
  7. Carefully flip the pancakes and cook for another 2-3 minutes until golden brown on both sides.
  8. If the pancakes are browning too fast, lower the heat to ensure even cooking.
  9. As you finish cooking, place the pancakes on a plate and cover with a clean kitchen towel to keep warm.
