- 1 cup milk
- 1 large apple, grated
- 1 large egg
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1 tablespoon vegetable oil (plus more for cooking)
- Optional: Chopped nuts or raisins
Instructions
- In a bowl, whisk together the flour, baking powder, cinnamon, and salt until evenly mixed.
- In another bowl, combine the yogurt, milk, egg, sugar, and vegetable oil. Stir until smooth and well-blended.
- Fold the grated apple into the wet mixture, ensuring it’s distributed evenly.
- Gradually add the wet mixture to the dry ingredients. Mix gently until just combined; it’s fine if there are a few lumps.
- Preheat a non-stick skillet or griddle over medium heat and lightly grease it with vegetable oil.
- Pour 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface, about 2-3 minutes.
- Carefully flip the pancakes and cook for another 2-3 minutes until golden brown on both sides.
- If the pancakes are browning too fast, lower the heat to ensure even cooking.
- As you finish cooking, place the pancakes on a plate and cover with a clean kitchen towel to keep warm.
