  2. In a skillet, cook the pancetta over medium heat until it’s crispy and golden.
  3. While the pancetta is cooking, whisk together the egg yolks, grated Parmesan, and black pepper in a separate bowl.
  4. Once the pasta is ready, drain it, but be sure to reserve some pasta water for later.
  5. Add the hot pasta to the skillet with pancetta, then remove from heat to prevent the eggs from scrambling.
  6. Quickly mix in the egg mixture, stirring rapidly and adding reserved pasta water as needed to create that creamy consistency.
  7. Serve immediately with extra Parmesan and a generous sprinkle of black pepper on top.
