- 400g spaghetti or fettuccine
- 150g pancetta, diced
- 4 egg yolks
- 100g grated Parmesan cheese
- Freshly ground black pepper
- Salt
Instructions
- Cook the pasta according to the package instructions until al dente. Reserve about a cup of the cooking water before draining.
- In a large pan, cook the diced pancetta over medium heat until crispy and golden.
- While the pancetta cooks, whisk together the egg yolks and grated Parmesan in a mixing bowl until creamy.
- Once the pasta is drained, add it to the pan with the pancetta and remove it from the heat.
- Mix in the egg yolk and cheese mixture, adding reserved pasta water as needed for a silky sauce.
- Season with freshly cracked black pepper, adjusting to taste. Serve immediately, garnished with extra cheese if desired.
Notes
Pair with a light salad or garlic bread for a complete meal. Store leftovers in an airtight container in the fridge for up to 2 days.
