- 2 cups mashed potatoes
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 2 tablespoons butter (melted)
- Butter and jam for serving
Instructions
- Combine the mashed potatoes, flour, baking powder, and salt in a mixing bowl.
- Lightly flour a clean surface, then turn out the dough onto it.
- Knead gently until the dough is smooth, then roll it out to about 1/2 inch thick.
- Cut the dough into rounds or wedges, based on your preference.
- Heat a griddle or skillet over medium heat and melt a bit of butter.
- Cook the potato farls for 4-5 minutes on each side, or until they are golden brown and crispy.
- Serve warm with additional butter and your favorite jam.
