- 1 can coconut milk

- 2 carrots, sliced
- 2 cups chicken broth

Instructions
- In a large pot, heat some oil over medium heat.
- Add the chopped onions, minced garlic, and minced ginger, sautéing until softened.
- Stir in the curry powder and cook for an additional minute until fragrant.
- Introduce the chicken thighs into the pot, browning them on all sides.
- Pour in the coconut milk and chicken broth, bringing the mixture to a simmer.
- Add the chopped bell pepper and sliced carrots, seasoning with salt and pepper to taste.
- Cover and let simmer for about 30-40 minutes, until the chicken is cooked through and tender.
- Garnish with fresh cilantro and serve with rice or bread.
