Description

A flavorful journey through Caribbean cuisine with tender chicken, aromatic spices, and creamy coconut milk.

Ingredients

Scale
  • 2 lbs chicken thighs (boneless, skinless recommended)
  • 2 tablespoons curry powder
  • 1 can coconut milk
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 inch fresh ginger, minced
  • 1 bell pepper, chopped (any color)
  • 2 carrots, sliced
  • 2 cups chicken broth
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat some oil over medium heat.
  2. Add the chopped onions, minced garlic, and minced ginger, sautéing until softened.
  3. Stir in the curry powder and cook for an additional minute until fragrant.
  4. Introduce the chicken thighs into the pot, browning them on all sides.
  5. Pour in the coconut milk and chicken broth, bringing the mixture to a simmer.
  6. Add the chopped bell pepper and sliced carrots, seasoning with salt and pepper to taste.
  7. Cover and let simmer for about 30-40 minutes, until the chicken is cooked through and tender.
  8. Garnish with fresh cilantro and serve with rice or bread.

Notes

Use fresh spices for the best flavor. Don’t rush the simmering process to ensure the chicken is tender.
