- Spaghetti or fettuccine (your choice of pasta)
- 2 large eggs
- 1 cup grated Parmesan cheese (or Pecorino Romano for a more traditional touch)
- 4 oz pancetta or guanciale (Italian bacon)
- Salt (to taste)
- Freshly ground black pepper (to taste)
- Fresh parsley for garnish (optional)
Instructions
- Cook your pasta in salted boiling water until al dente, following the package instructions.
- While the pasta cooks, heat a skillet over medium heat and add the pancetta. Sauté until crispy and browned.
- In a mixing bowl, whisk together the eggs and Parmesan cheese until well combined.
- Once the pasta is ready, reserve about a cup of the pasta water and drain the rest.
- Quickly add the hot pasta into the skillet with the pancetta and remove from heat.
- Immediately pour the egg and cheese mixture over the pasta, stirring rapidly to create a creamy sauce. If it seems too thick, add reserved pasta water slowly until you reach your desired consistency.
- Season generously with salt and fresh black pepper to taste.
- Serve hot, garnished with fresh parsley if desired.
Notes
Best enjoyed freshly made. Can be paired with a side salad and white wine for a complete meal.
