Ingredients

  • Spaghetti or fettuccine (your choice of pasta)
  • 2 large eggs
  • 1 cup grated Parmesan cheese (or Pecorino Romano for a more traditional touch)
  • 4 oz pancetta or guanciale (Italian bacon)
  • Salt (to taste)
  • Freshly ground black pepper (to taste)
  • Fresh parsley for garnish (optional)

Instructions

  1. Cook your pasta in salted boiling water until al dente, following the package instructions.
  2. While the pasta cooks, heat a skillet over medium heat and add the pancetta. Sauté until crispy and browned.
  3. In a mixing bowl, whisk together the eggs and Parmesan cheese until well combined.
  4. Once the pasta is ready, reserve about a cup of the pasta water and drain the rest.
  5. Quickly add the hot pasta into the skillet with the pancetta and remove from heat.
  6. Immediately pour the egg and cheese mixture over the pasta, stirring rapidly to create a creamy sauce. If it seems too thick, add reserved pasta water slowly until you reach your desired consistency.
  7. Season generously with salt and fresh black pepper to taste.
  8. Serve hot, garnished with fresh parsley if desired.

Notes

Best enjoyed freshly made. Can be paired with a side salad and white wine for a complete meal.
