Ingredients
- Fresh pumpkin chunks
 - Tomatoes (canned or fresh)
 - Cumin
 - Paprika
 - Feta cheese
 - Onion
 - Garlic
 - Olive oil
 - Salt
 - Pepper
 - Eggs
 - Crusty bread (for serving)
 
Instructions
- Heat olive oil in a pan over medium heat and sauté diced onion and garlic until translucent.
 - Add fresh pumpkin chunks and cook until slightly softened.
 - Stir in the tomatoes, cumin, paprika, salt, and pepper. Simmer until the pumpkin is tender.
 - Create small wells in the mixture and crack eggs into them. Cover the pan and cook until the eggs are set to your liking.
 - Sprinkle feta cheese on top and let it slightly melt.
 - Serve hot with crusty bread.

Serve with fresh herbs and a squeeze of lemon for added brightness. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
