Description

A comforting and nutritious dish combining the earthy sweetness of pumpkin with traditional shakshuka flavors, perfect for any meal.


Ingredients

  • Fresh pumpkin chunks
  • Tomatoes (canned or fresh)
  • Cumin
  • Paprika
  • Feta cheese
  • Onion
  • Garlic
  • Olive oil
  • Salt
  • Pepper
  • Eggs
  • Crusty bread (for serving)

Instructions

  1. Heat olive oil in a pan over medium heat and sauté diced onion and garlic until translucent.
  2. Add fresh pumpkin chunks and cook until slightly softened.
  3. Stir in the tomatoes, cumin, paprika, salt, and pepper. Simmer until the pumpkin is tender.
  4. Create small wells in the mixture and crack eggs into them. Cover the pan and cook until the eggs are set to your liking.
  5. Sprinkle feta cheese on top and let it slightly melt.
  6. Serve hot with crusty bread.

Notes

Serve with fresh herbs and a squeeze of lemon for added brightness. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
