Description

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 cup chicken broth
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup heavy cream or half-and-half
  • Optional toppings: Shredded cheese, sour cream, green onions

Instructions

  1. In a slow cooker or large pot, combine the shredded chicken, white beans, diced tomatoes, chicken broth, diced onion, minced garlic, cumin, chili powder, oregano, salt, and pepper.
  2. If using a slow cooker, cover and cook on low for 6-8 hours or high for 3-4 hours. For stovetop preparation, bring everything to a boil, then reduce the heat and let it simmer for about 30 minutes.
  3. Stir in the heavy cream (or half-and-half) and allow it to cook for an additional 10-15 minutes until heated through.
  4. Serve hot, garnished with your choice of toppings.

Notes

Use rotisserie chicken for added flavor and convenience. This chili can be easily frozen and reheated.
