Description

A delightful medley of smoky bacon and sweet, caramelized onions wrapped in a crispy grilled cheese sandwich.


Ingredients

  • 4 slices of bread (sourdough recommended)
  • 2 tablespoons butter, softened
  • 4 strips of bacon, thick-cut
  • 1 large onion, thinly sliced
  • 1 tablespoon brown sugar
  • 1/2 teaspoon salt
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded Gruyere cheese

Instructions

  1. In a skillet over medium heat, cook the bacon until crispy. Remove from skillet and set aside, leaving the drippings.
  2. Add sliced onions to the skillet. Cook over medium heat, stirring occasionally, until they soften and turn golden brown. Add brown sugar and salt, cooking until caramelized, about 10-15 minutes.
  3. Spread butter on one side of each slice of bread.
  4. Layer cheese, crispy bacon, and caramelized onions between two slices of bread, buttered sides facing out.
  5. Grill the sandwich in the skillet over medium heat, about 3-4 minutes per side, until the bread is golden brown and the cheese melts.

Notes

Customize with jalapeños for a spicy kick or switch cheeses based on your preferences.
