			- 4 slices of bread (sourdough recommended)
 - 2 tablespoons butter, softened
 - 4 strips of bacon, thick-cut
 - 1 large onion, thinly sliced
 - 1 tablespoon brown sugar
 - 1/2 teaspoon salt
 - 1/2 cup shredded cheddar cheese
 - 1/2 cup shredded Gruyere cheese
 
Instructions
- In a skillet over medium heat, cook the bacon until crispy. Remove from skillet and set aside, leaving the drippings.
 - Add sliced onions to the skillet. Cook over medium heat, stirring occasionally, until they soften and turn golden brown. Add brown sugar and salt, cooking until caramelized, about 10-15 minutes.
 - Spread butter on one side of each slice of bread.
 - Layer cheese, crispy bacon, and caramelized onions between two slices of bread, buttered sides facing out.
 - Grill the sandwich in the skillet over medium heat, about 3-4 minutes per side, until the bread is golden brown and the cheese melts.
 
Notes
Customize with jalapeños for a spicy kick or switch cheeses based on your preferences.
