Instructions

  1. Cook the Pasta: Boil a pot of salted water, adding your pasta. Cook until al dente, following package instructions. Reserve a bit of pasta water for later, then drain.
  2. Sauté the Bacon: In a large skillet over medium heat, add the diced bacon. Cook until crispy, then toss in the minced garlic, cooking for an extra minute until fragrant.
  3. Whisk and Combine: In a mixing bowl, whisk together the eggs and grated Parmesan until smooth.
  4. Create the Sauce: Take the skillet off the heat, then add the drained pasta directly into the skillet with the bacon. Quickly pour the egg and cheese mixture over the top, stirring vigorously to combine and create a creamy sauce. If it appears too thick, add reserved pasta water, a little at a time, until desired consistency is achieved.
  5. Season: Add salt and pepper to taste.
