- 8–10 slices bacon, cooked and chopped
- 1 tbsp butter or olive oil
- 1 large onion, diced
- 2 large carrots, peeled and sliced
- 4 cups chicken broth
- 1–2 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder (or 4 cloves minced garlic)
- ¼ tsp dried thyme
- ½–1 tsp red chili flakes (optional for a kick)
- 16 oz gnocchi (store-bought or homemade)
- 2 cups heavy cream or half-and-half
- 2 cups shredded cheddar cheese (medium or sharp)
Instructions
- Cook the bacon in a large pot over medium heat until crispy. Remove and chop into bite-sized pieces.
- In the same pot, add the butter or olive oil. Sauté the onions and carrots until softened, about 5-7 minutes.
- Pour in the chicken broth and bring to a gentle simmer.
- Stir in heavy cream, salt, pepper, garlic powder, thyme, and red chili flakes (if using). Stir until combined.
- Add the gnocchi and cook for about 2 minutes until they float.
- Stir in the chopped bacon and adjust seasoning if needed. Serve hot!
Notes
Garnish with fresh herbs, serve with crusty bread, and add more shredded cheese for an extra indulgence.
