- 2 tablespoons butter
- 6 large eggs
- ½ teaspoon garlic powder
- ⅛ teaspoon cayenne pepper
- Sea salt and black pepper, to taste
- 4 large flour tortillas, warmed
- 2 cups roasted or pan-fried potatoes
- 1 cup grated cheddar cheese
- 1 cup cooked breakfast sausage, cut into pieces
- 5 slices bacon, cooked and sliced
- Sour cream (for serving)
- Salsa (for serving)
Instructions
- In a skillet over medium heat, melt the butter until it’s bubbly.
- Add the eggs, garlic powder, cayenne, salt, and pepper to the skillet. Stir continuously until the eggs are fully scrambled and set.
- Lay each warmed tortilla flat on a clean surface.
- On each tortilla, add ½ cup of scrambled eggs, ½ cup of roasted potatoes, ¼ cup of grated cheese, and ¼ cup of either bacon or sausage.
- Tightly roll each tortilla into a burrito shape, tucking in the ends to keep everything inside.
- In the same skillet, add a small amount of butter or oil. Cook each burrito until golden brown on both sides, or you can bake them at 350°F (175°C) for about 10 minutes.
- Enjoy your breakfast burritos warm, accompanied by salsa and sour cream!
