  • 2 tablespoons butter
  • 6 large eggs
  • ½ teaspoon garlic powder
  • ⅛ teaspoon cayenne pepper
  • Sea salt and black pepper, to taste
  • 4 large flour tortillas, warmed
  • 2 cups roasted or pan-fried potatoes
  • 1 cup grated cheddar cheese
  • 1 cup cooked breakfast sausage, cut into pieces
  • 5 slices bacon, cooked and sliced
  • Sour cream (for serving)
  • Salsa (for serving)

Instructions

  1. In a skillet over medium heat, melt the butter until it’s bubbly.
  2. Add the eggs, garlic powder, cayenne, salt, and pepper to the skillet. Stir continuously until the eggs are fully scrambled and set.
  3. Lay each warmed tortilla flat on a clean surface.
  4. On each tortilla, add ½ cup of scrambled eggs, ½ cup of roasted potatoes, ¼ cup of grated cheese, and ¼ cup of either bacon or sausage.
  5. Tightly roll each tortilla into a burrito shape, tucking in the ends to keep everything inside.
  6. In the same skillet, add a small amount of butter or oil. Cook each burrito until golden brown on both sides, or you can bake them at 350°F (175°C) for about 10 minutes.
  7. Enjoy your breakfast burritos warm, accompanied by salsa and sour cream!
