			- 8 large eggs
 - 6 strips of bacon (chopped)
 - 2 medium potatoes (diced)
 - 1/2 cup heavy cream
 - 1/4 cup fresh chives (chopped)
 - 1/2 cup cheddar cheese (grated)
 - Salt and pepper to taste
 - 2 tablespoons olive oil
 
Instructions
- Preheat your oven to 375°F.
 - In a skillet, heat the olive oil over medium heat and cook the chopped bacon until crispy. Use a slotted spoon to remove it and set aside.
 - In the same skillet, add the diced potatoes and cook until golden brown, stirring occasionally.
 - While the potatoes are cooking, whisk the eggs and heavy cream in a separate bowl, adding salt and pepper to taste.
 - Once the potatoes are ready, pour the egg mixture over them, ensuring an even coat.
 - Sprinkle the crispy bacon and cheddar cheese on top.
 - Cook it on the stovetop for about 3 minutes until the edges begin to set.
 - Carefully transfer the skillet to the oven and bake for 15-20 minutes until the frittata is firm and slightly puffed.
 - Remove from the oven and garnish with chopped chives before slicing and serving.
 
Notes
This frittata can be stored in the fridge for up to 3 days and can also be frozen for up to three months. Reheat in a microwave or oven before serving.
