Description

A deliciously cozy frittata featuring crispy bacon, tender potatoes, and a rich egg mixture, perfect for any meal of the day.


Ingredients

  • 8 large eggs
  • 6 strips of bacon (chopped)
  • 2 medium potatoes (diced)
  • 1/2 cup heavy cream
  • 1/4 cup fresh chives (chopped)
  • 1/2 cup cheddar cheese (grated)
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat your oven to 375°F.
  2. In a skillet, heat the olive oil over medium heat and cook the chopped bacon until crispy. Use a slotted spoon to remove it and set aside.
  3. In the same skillet, add the diced potatoes and cook until golden brown, stirring occasionally.
  4. While the potatoes are cooking, whisk the eggs and heavy cream in a separate bowl, adding salt and pepper to taste.
  5. Once the potatoes are ready, pour the egg mixture over them, ensuring an even coat.
  6. Sprinkle the crispy bacon and cheddar cheese on top.
  7. Cook it on the stovetop for about 3 minutes until the edges begin to set.
  8. Carefully transfer the skillet to the oven and bake for 15-20 minutes until the frittata is firm and slightly puffed.
  9. Remove from the oven and garnish with chopped chives before slicing and serving.

Notes

This frittata can be stored in the fridge for up to 3 days and can also be frozen for up to three months. Reheat in a microwave or oven before serving.
