An irresistible dessert that captures the essence of fall with layers of caramelized apples, mascarpone cream, and crunchy ladyfingers.

- 4 large apples (e.g., Boskop or Elstar)
- 100 g sugar
- 50 g butter
- 1 tsp cinnamon
- 1 pinch nutmeg
- 200 ml apple juice
- 200 g whipping cream
- 250 g mascarpone cheese
- 100 g natural yogurt
- 1 tsp vanilla extract
- 200 g ladyfingers
- 50 g chopped walnuts or almonds (optional)
- Fresh mint for garnish (optional)
Instructions
- Wash, peel, and core the apples, then cut them into small cubes.
- In a large skillet, melt the butter over medium heat. Add the sugar and stir until it caramelizes to a golden brown.
- Stir in the apple cubes, coating them in the caramel. Add the cinnamon and nutmeg, mixing well.
- Pour in the apple juice, bring to a simmer, and allow the apples to cook for 10-15 minutes until tender yet still holding their shape.
- Remove the pan from heat and let the caramelized apples cool.
- In a chilled bowl, whip the cream until stiff peaks form.
- In another bowl, combine mascarpone, yogurt, and vanilla extract until smooth.
- Gently fold the whipped cream into the mascarpone mixture, being careful not to deflate the cream.
- In a large glass bowl or individual cups, start with a layer of ladyfingers, slightly soaked in apple juice if desired. Add a layer of caramelized apples, followed by a layer of mascarpone cream. Repeat the layers until all ingredients are used, finishing with the mascarpone cream on top.
- Sprinkle optional chopped nuts on top for an added crunch and garnish with fresh mint.
- Cover and refrigerate for at least 2 hours to let the flavors meld.

Can be stored in the refrigerator for up to three days. Best when prepared a day in advance.
