Description

An irresistible dessert that captures the essence of fall with layers of caramelized apples, mascarpone cream, and crunchy ladyfingers.


Ingredients

  • 4 large apples (e.g., Boskop or Elstar)
  • 100 g sugar
  • 50 g butter
  • 1 tsp cinnamon
  • 1 pinch nutmeg
  • 200 ml apple juice
  • 200 g whipping cream
  • 250 g mascarpone cheese
  • 100 g natural yogurt
  • 1 tsp vanilla extract
  • 200 g ladyfingers
  • 50 g chopped walnuts or almonds (optional)
  • Fresh mint for garnish (optional)

Instructions

  1. Wash, peel, and core the apples, then cut them into small cubes.
  2. In a large skillet, melt the butter over medium heat. Add the sugar and stir until it caramelizes to a golden brown.
  3. Stir in the apple cubes, coating them in the caramel. Add the cinnamon and nutmeg, mixing well.
  4. Pour in the apple juice, bring to a simmer, and allow the apples to cook for 10-15 minutes until tender yet still holding their shape.
  5. Remove the pan from heat and let the caramelized apples cool.
  6. In a chilled bowl, whip the cream until stiff peaks form.
  7. In another bowl, combine mascarpone, yogurt, and vanilla extract until smooth.
  8. Gently fold the whipped cream into the mascarpone mixture, being careful not to deflate the cream.
  9. In a large glass bowl or individual cups, start with a layer of ladyfingers, slightly soaked in apple juice if desired. Add a layer of caramelized apples, followed by a layer of mascarpone cream. Repeat the layers until all ingredients are used, finishing with the mascarpone cream on top.
  10. Sprinkle optional chopped nuts on top for an added crunch and garnish with fresh mint.
  11. Cover and refrigerate for at least 2 hours to let the flavors meld.

Notes

Can be stored in the refrigerator for up to three days. Best when prepared a day in advance.
