Ingredients
- Crispy bacon
- Seasoned diced potatoes
- Fluffy scrambled eggs
- Shredded Monterey Jack cheese
- Taco shells (hard or soft)
- Salt and pepper
- Optional toppings: sour cream, salsa, avocado
Instructions
- Preheat your oven to 375°F (190°C).
- Cook the bacon in a skillet over medium heat until crispy. Crumble into bite-sized pieces.
- In the same skillet, add the seasoned diced potatoes and cook until golden brown.
- In a bowl, beat the eggs with salt and pepper, then scramble in a pan until fluffy.
- Layer crumbled bacon, cooked potatoes, scrambled eggs, and shredded cheese in each taco shell.
- Place the filled taco shells in a baking dish and bake for 15-20 minutes until the cheese is melted and bubbly.
- Serve immediately with optional toppings.
Notes
For a healthier option, substitute bacon with turkey bacon or use egg whites. You can also experiment with different cheeses and toppings.
