Description

Ingredients

  • Crispy bacon
  • Seasoned diced potatoes
  • Fluffy scrambled eggs
  • Shredded Monterey Jack cheese
  • Taco shells (hard or soft)
  • Salt and pepper
  • Optional toppings: sour cream, salsa, avocado

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the bacon in a skillet over medium heat until crispy. Crumble into bite-sized pieces.
  3. In the same skillet, add the seasoned diced potatoes and cook until golden brown.
  4. In a bowl, beat the eggs with salt and pepper, then scramble in a pan until fluffy.
  5. Layer crumbled bacon, cooked potatoes, scrambled eggs, and shredded cheese in each taco shell.
  6. Place the filled taco shells in a baking dish and bake for 15-20 minutes until the cheese is melted and bubbly.
  7. Serve immediately with optional toppings.
