Ingredients

  • 4 eggs
  • 2 fresh tomatoes, halved
  • 2 cups fresh spinach
  • 2 tablespoons olive oil
  • Salt, to taste
  • Pepper, to taste
  • 2 cloves garlic, minced (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a baking dish, place a block of feta cheese in the center. Surround it with halved tomatoes and fresh spinach.
  3. Drizzle everything generously with olive oil and season with salt, pepper, and minced garlic if you’re using it.
  4. Create small wells in the mixture and crack the eggs into them.
  5. Bake in the preheated oven for about 20-25 minutes, or until the eggs are set and the feta is slightly golden.
  6. Serve warm and enjoy every bite!

Notes

For a creamier dish, use full-fat feta cheese. Add red pepper flakes for some heat if desired.
