Ingredients

- 1 block feta cheese
- 4 eggs
- 2 fresh tomatoes, halved
- 2 cups fresh spinach
- 2 tablespoons olive oil
- Salt, to taste
- Pepper, to taste
- 2 cloves garlic, minced (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a baking dish, place a block of feta cheese in the center. Surround it with halved tomatoes and fresh spinach.
- Drizzle everything generously with olive oil and season with salt, pepper, and minced garlic if you’re using it.
- Create small wells in the mixture and crack the eggs into them.
- Bake in the preheated oven for about 20-25 minutes, or until the eggs are set and the feta is slightly golden.
- Serve warm and enjoy every bite!
Notes
For a creamier dish, use full-fat feta cheese. Add red pepper flakes for some heat if desired.
