  • Total Time: 50 minutes
  • Yield: 4 servings 1x
  • Diet: Vegetarian

Description

A creamy, cheesy, and tomato-rich dish that’s simple to prepare and bursting with flavor.

Ingredients

Scale
  • 2 ½ cups grape tomatoes, washed and dried
  • 1 (8 oz) brick of Feta cheese
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • 5 tablespoons olive oil (with an extra dash to drizzle)
  • ¼ cup chopped fresh basil
  • 12 oz bow tie pasta, cooked, drained, and kept warm

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium-sized baking dish, add the washed and dried grape tomatoes.
  3. Place the feta cheese brick right in the center of the tomatoes.
  4. Drizzle 3 tablespoons of olive oil over the tomatoes and feta.
  5. Sprinkle Italian seasoning and salt evenly over the top.
  6. Drizzle the remaining 2 tablespoons of olive oil over the feta.
  7. Bake for 30-35 minutes, or until the tomatoes burst and the feta softens beautifully.
  8. Once out of the oven, stir the feta and tomatoes together until well combined.
  9. Add in the chopped fresh basil and mix in the warm cooked pasta until everything is nicely coated.
  10. Serve hot and enjoy your delicious creation!

Notes

Pair with a simple green salad or crusty artisan bread. You can also roast other vegetables alongside the tomatoes for added flavor.
