Ingredients

  • 1 cup milk
  • 1/2 cup fresh lemon juice
  • Zest of 1 lemon
  • 3 large eggs, separated
  • 1/4 teaspoon cream of tartar
  • Powdered sugar (for serving)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, vigorously whisk together the sugar, flour, and salt.
  3. Gradually mix in the milk, followed by the lemon juice and lemon zest until the mixture is smooth.
  4. In another bowl, beat the egg yolks until pale and combined well. Slowly add this to the lemon mixture, stirring thoroughly.
  5. In a clean bowl, beat the egg whites with the cream of tartar until stiff peaks form.
  6. Gently fold the whipped egg whites into the lemon mixture, careful not to deflate them.
  7. Pour the combination into a greased baking dish.
  8. Bake for 30-35 minutes or until the top turns golden and is set to the touch.
