  • 1 Avocado, diced

  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season your chicken breasts with olive oil, salt, pepper, and Italian herbs.
  3. Bake them in the preheated oven for 25-30 minutes, or until fully cooked.
  4. Rest the cooked chicken for a few minutes, then slice it into strips.
  5. Combine baby spinach, halved cherry tomatoes, diced avocado, and mozzarella balls in a large bowl.
  6. Add the sliced chicken on top of the salad.
  7. Drizzle with your homemade balsamic vinaigrette and toss gently to combine.
