- 1 cup Mozzarella Balls
- 1 Avocado, diced
- 1 cup Cherry Tomatoes, halved
- 4 cups Baby Spinach
- 1/4 cup Balsamic Vinaigrette
- 2 tbsp Olive Oil
- Salt, to taste
- Pepper, to taste
- Italian Herbs, to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Season your chicken breasts with olive oil, salt, pepper, and Italian herbs.
- Bake them in the preheated oven for 25-30 minutes, or until fully cooked.
- Rest the cooked chicken for a few minutes, then slice it into strips.
- Combine baby spinach, halved cherry tomatoes, diced avocado, and mozzarella balls in a large bowl.
- Add the sliced chicken on top of the salad.
- Drizzle with your homemade balsamic vinaigrette and toss gently to combine.
- Serve immediately or store in the fridge for easy meal prep throughout the week.
