  • 1 cup Mozzarella balls
  • 1 Avocado
  • 1 cup Cherry tomatoes
  • 4 cups Baby spinach
  • 1/4 cup Balsamic vinegar
  • 2 tablespoons Olive oil
  • 1 tablespoon Honey
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Marinate the chicken breasts in a mixture of balsamic vinegar, olive oil, honey, salt, and pepper. Let it sit for at least 30 minutes.
  3. Bake the marinated chicken in the preheated oven for 25-30 minutes, or until fully cooked (an internal temperature of 165°F or 74°C).
  4. While the chicken is baking, prepare the balsamic vinaigrette by whisking together balsamic vinegar, olive oil, honey, salt, and pepper.
  5. After baking, let the chicken rest for a few minutes before slicing.
