Description

A creamy and comforting baked rice pudding that brings warmth and nostalgia to any meal.


Ingredients

  • 1 cup rice
  • 2 cups water
  • 1 can (14 oz) sweetened condensed milk
  • 2 cups milk
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 2 eggs
  • Raisins (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Bring water to a boil in a pot, then add the rice. Cook for about 15-20 minutes or until the rice is tender.
  3. In a large mixing bowl, combine the sweetened condensed milk, milk, sugar, vanilla extract, cinnamon, and salt, stirring to blend.
  4. Once the rice is cooked, stir it into the milk mixture.
  5. In a separate bowl, beat the eggs and then incorporate them into the rice mixture.
  6. If using, fold in the raisins.
  7. Pour everything into a greased baking dish and bake for 30-40 minutes, or until it’s set and lightly golden on top.
  8. Allow it to cool slightly before serving. Enjoy it warm or chilled!

Notes

Serve warm with a sprinkle of cinnamon or a dollop of whipped cream. Pairs well with caramel sauce or fresh berries.
