Wholesome and easy Banana Oatmeal Bars that are perfect for busy mornings or as a healthy snack.
Ingredients

- 3 ripe bananas (about 1 ½ cups mashed)
- 2 cups rolled oats
- ⅓ cup honey or pure maple syrup
- 2 large eggs
- 1 tsp baking powder
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, mash the ripe bananas until smooth.
- Add the rolled oats, honey or maple syrup, eggs, baking powder, and vanilla extract. Stir until everything is well combined.
- Grease an 8×8-inch baking dish or line it with parchment paper for easy removal.
- Pour the batter into the prepared dish and spread it evenly.
- Bake for 25-30 minutes or until the edges are golden brown and the center is set.
- Allow the bars to cool for at least ten minutes before slicing them into squares.
Notes
Store in an airtight container at room temperature for up to three days, or refrigerate for up to a week. Freeze for up to three months.
