  • 1 cup rolled oats
  • 1/2 cup peanut butter or almond butter
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips or nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a baking sheet with parchment paper.
  2. Mash the ripe bananas in a large bowl until creamy.
  3. Stir in the rolled oats, nut butter, honey (or maple syrup), vanilla extract, baking soda, and salt until well combined.
  4. If using chocolate chips or nuts, gently fold them into the mixture.
  5. Drop spoonfuls of the cookie mixture onto the lined baking sheet, spacing them out evenly.
  6. Bake for 10-12 minutes or until the cookies are golden brown.
  7. Allow to cool slightly on the baking sheet before transferring to a wire rack to cool completely.

Notes

For a nut-free option, use sunflower seed butter and skip the chocolate chips.
