- 2 ripe bananas
- 1 cup rolled oats
- 1/2 cup peanut butter or almond butter
- 1/4 cup honey or maple syrup
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup chocolate chips or nuts (optional)
Instructions
- Preheat your oven to 350°F (175°C) and prepare a baking sheet with parchment paper.
- Mash the ripe bananas in a large bowl until creamy.
- Stir in the rolled oats, nut butter, honey (or maple syrup), vanilla extract, baking soda, and salt until well combined.
- If using chocolate chips or nuts, gently fold them into the mixture.
- Drop spoonfuls of the cookie mixture onto the lined baking sheet, spacing them out evenly.
- Bake for 10-12 minutes or until the cookies are golden brown.
- Allow to cool slightly on the baking sheet before transferring to a wire rack to cool completely.
Notes
For a nut-free option, use sunflower seed butter and skip the chocolate chips.
