Description

Delicious and healthy banana oatmeal muffins that are easy to make, perfect for breakfast or a snack.


Ingredients

  • 2 ripe bananas
  • 1 cup rolled oats
  • 1/2 cup milk (dairy or non-dairy)
  • 1/4 cup maple syrup (optional for added sweetness)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon vanilla extract
  • 1/2 cup chocolate chips or blueberries (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it.
  2. In a large bowl, mash the ripe bananas until smooth.
  3. Add the rolled oats, milk, maple syrup, baking powder, baking soda, and vanilla extract to the mashed bananas and mix until combined.
  4. If desired, fold in chocolate chips or blueberries.
  5. Divide the batter evenly into the prepared muffin tin, filling each cup about three-quarters full.
  6. Bake for 15-20 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the muffins cool before serving. Enjoy!
