- 2 ripe bananas
- 1 cup rolled oats
- 1/2 cup milk (dairy or non-dairy)
- 1/4 cup maple syrup (optional for added sweetness)
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon vanilla extract
- 1/2 cup chocolate chips or blueberries (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it.
- In a large bowl, mash the ripe bananas until smooth.
- Add the rolled oats, milk, maple syrup, baking powder, baking soda, and vanilla extract to the mashed bananas and mix until combined.
- If desired, fold in chocolate chips or blueberries.
- Divide the batter evenly into the prepared muffin tin, filling each cup about three-quarters full.
- Bake for 15-20 minutes, or until a toothpick inserted into the center comes out clean.
- Let the muffins cool before serving. Enjoy!
