  • 1/4 cup granulated sugar
  • 5 tablespoons unsalted butter, melted
  • 32 ounces cream cheese, softened
  • 1 1/3 cups granulated sugar
  • 1 cup pureed bananas (about 2 medium bananas)
  • 1 tablespoon vanilla extract
  • 4 large eggs, room temperature and lightly beaten
  • 1 cup heavy cream, cold
  • 1/4 cup confectioners’ sugar
  • 1 tablespoon instant vanilla pudding mix
  • Nilla wafer crumbs, roughly crushed (for garnish)
  • Banana slices (for garnish)

Instructions

  1. Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan.
  2. Combine the Nilla wafer crumbs, 1/4 cup granulated sugar, and the melted butter. Press this mixture into the bottom of your prepared springform pan to create a crust.
  3. Beat the cream cheese and 1 1/3 cups granulated sugar until smooth.
  4. Add the pureed bananas and vanilla extract, mixing until well combined.
  5. Beat in the eggs, one at a time, ensuring each is fully incorporated.
  6. Pour the cream cheese mixture over the crust in the springform pan.
  7. Bake for 55-60 minutes or until the center is set but still slightly jiggly.
  8. Whip the cold heavy cream with confectioners’ sugar and instant vanilla pudding mix until soft peaks form.
  9. Spread the whipped cream on top and sprinkle with crushed Nilla wafer crumbs and banana slices.
  10. Refrigerate for at least 240 minutes—or overnight—for the best results before serving.

Notes

For a lighter version, substitute Greek yogurt for some cream cheese. Store leftovers in an airtight container in the refrigerator and enjoy within 3-4 days.
