Description

Bang Bang Salmon Bites are a crispy, flavorful appetizer or main dish, combining tender salmon with a zesty sauce for irresistible satisfaction.


Ingredients

  • 1 lb fresh salmon, skinless, cut into bite-sized cubes
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 cup panko breadcrumbs
  • 1 tbsp olive oil or cooking spray
  • ½ cup mayonnaise
  • 2 tbsp sweet chili sauce
  • 1 tbsp sriracha
  • 1 tsp honey (optional)
  • Juice of ½ lime
  • 2 cups cooked jasmine rice (or cauliflower rice)
  • 1 cup shredded purple cabbage
  • 1 avocado, sliced
  • ½ cup shredded carrots
  • 2 green onions, sliced
  • Fresh cilantro and sesame seeds for garnish

Instructions

  1. Preheat your oven to 400°F (200°C) or set your air fryer to the same temperature.
  2. In a bowl, toss the bite-sized salmon cubes with garlic powder, smoked paprika, salt, and black pepper until evenly coated.
  3. Place the panko breadcrumbs in a separate bowl. Drizzle olive oil over the breadcrumbs or lightly spray for a crispier finish. Dip each seasoned salmon piece into the breadcrumbs, ensuring a good coating.
  4. Arrange the coated salmon on a baking sheet lined with parchment paper (for the oven) or place in a single layer in your air fryer basket. Bake for 12-15 minutes until golden and cooked through, or air-fry for about 8-10 minutes.
  5. Mix mayonnaise, sweet chili sauce, sriracha, honey (if using), and lime juice in a bowl until smooth to make the Bang Bang sauce.
  6. Prepare serving bowls with jasmine rice or cauliflower rice, shredded cabbage, sliced avocado, and carrots. Top with the crunchy salmon bites and drizzle with the Bang Bang sauce. Garnish with green onions, cilantro, and sesame seeds.

Notes

For extra crispiness, double-bread the salmon by dipping them in egg wash before coating in panko.
