  • Yield: 4 servings 1x
  • Diet: Pescatarian

Description

Delicious and vibrant salmon bites coated in crispy panko and served with a creamy, spicy Bang Bang sauce.

Ingredients

Scale
  • 1 lb fresh salmon (skinless and cut into bite-sized cubes)
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 cup panko breadcrumbs
  • 1 tbsp olive oil or spray for crisping
  • ½ cup mayonnaise
  • 2 tbsp sweet chili sauce
  • 1 tbsp sriracha (to taste)
  • 1 tsp honey (optional)
  • Juice of ½ lime
  • 2 cups cooked jasmine rice (or cauliflower rice)
  • 1 cup shredded purple cabbage
  • 1 avocado (sliced)
  • ½ cup shredded carrots
  • 2 green onions (sliced)
  • Fresh cilantro and sesame seeds for garnish

Instructions

  1. Preheat your oven or air fryer to an optimal temperature.
  2. Season the salmon: In a bowl, toss the salmon cubes with garlic powder, smoked paprika, salt, and black pepper until evenly coated.
  3. Coat in breadcrumbs: Roll each seasoned piece of salmon in the panko breadcrumbs until fully covered.
  4. Bake or air-fry: Arrange the salmon bites on a baking sheet or air fryer basket. Lightly spray or brush them with olive oil and bake for about 10-12 minutes or air-fry until crispy and cooked through.
  5. Make the Bang Bang Sauce: In a small bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, honey (if using), and lime juice.
  6. Assemble the bowls: Serve the crispy salmon bites over rice, topped with cabbage, shredded carrots, avocado, and a drizzle of the Bang Bang sauce, finishing with green onions and fresh cilantro.

Notes

Double-dip the salmon cubes in egg wash before coating with panko for extra crunch. You can prep the salmon and breading the night before.
