Delicious and vibrant salmon bites coated in crispy panko and served with a creamy, spicy Bang Bang sauce.

- 1 lb fresh salmon (skinless and cut into bite-sized cubes)
- 1 tsp garlic powder
- 1 tsp smoked paprika
- ½ tsp salt
- ½ tsp black pepper
- 1 cup panko breadcrumbs
- 1 tbsp olive oil or spray for crisping
- ½ cup mayonnaise
- 2 tbsp sweet chili sauce
- 1 tbsp sriracha (to taste)
- 1 tsp honey (optional)
- Juice of ½ lime
- 2 cups cooked jasmine rice (or cauliflower rice)
- 1 cup shredded purple cabbage
- 1 avocado (sliced)
- ½ cup shredded carrots
- 2 green onions (sliced)
- Fresh cilantro and sesame seeds for garnish
Instructions
- Preheat your oven or air fryer to an optimal temperature.
- Season the salmon: In a bowl, toss the salmon cubes with garlic powder, smoked paprika, salt, and black pepper until evenly coated.
- Coat in breadcrumbs: Roll each seasoned piece of salmon in the panko breadcrumbs until fully covered.
- Bake or air-fry: Arrange the salmon bites on a baking sheet or air fryer basket. Lightly spray or brush them with olive oil and bake for about 10-12 minutes or air-fry until crispy and cooked through.
- Make the Bang Bang Sauce: In a small bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, honey (if using), and lime juice.
- Assemble the bowls: Serve the crispy salmon bites over rice, topped with cabbage, shredded carrots, avocado, and a drizzle of the Bang Bang sauce, finishing with green onions and fresh cilantro.
Notes
Double-dip the salmon cubes in egg wash before coating with panko for extra crunch. You can prep the salmon and breading the night before.
