  • 1 cup shredded purple cabbage
  • 1 avocado (sliced)
  • ½ cup shredded carrots
  • 2 green onions (sliced)
  • Fresh cilantro and sesame seeds for garnish

Instructions

  1. Preheat your oven or air fryer to 400°F (200°C).
  2. Season the salmon: In a bowl, mix the garlic powder, smoked paprika, salt, and black pepper. Toss the salmon cubes in the seasoning until well coated.
  3. Coat in breadcrumbs: Dip each piece of seasoned salmon into the panko breadcrumbs, ensuring they are fully covered. You can use a little olive oil spray to help them crisp up.
  4. Bake or air-fry: Place the salmon bites on a baking sheet or in your air fryer basket. Bake for about 12-15 minutes or air-fry for 8-10 minutes until crispy and golden brown.
  5. Make the Bang Bang sauce: Whisk together the mayonnaise, sweet chili sauce, sriracha, honey, and lime juice in a small bowl. Adjust the spice to your liking.
  6. Assemble the bowls: Serve the salmon bites on a bed of jasmine or cauliflower rice, topped with shredded cabbage, carrots, avocado, and a drizzle of Bang Bang sauce. Garnish with sliced green onions, cilantro, and sesame seeds.
