- 2 teaspoons baking powder
- ½ teaspoon salt
- 1 cup sugar
- 1 tablespoon orange zest
- ¾ cup orange juice
- ¼ cup melted butter
- 2 eggs
- 1 teaspoon vanilla extract
- 1½ cups fresh cranberries (or dried cranberries)
- Powdered sugar for dusting (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a mixing bowl, whisk together flour, baking powder, salt, sugar, and orange zest.
- In another bowl, mix orange juice, melted butter, eggs, and vanilla extract.
- Pour the wet mix into the dry ingredients, stirring until just combined.
- Gently fold in the cranberries.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50-60 minutes, or until a toothpick comes out clean.
- Cool in the pan for 10 minutes, then remove to cool completely. Dust with powdered sugar if desired before slicing.
