- 1 pound ground beef
- 1 cup uncooked rice (any variety)
- 2 cups beef broth
- 1 cup sweet corn (frozen or canned)
- 1 packet ranch seasoning mix
- 1 cup shredded cheese (cheddar or your choice)
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, brown the ground beef over medium heat. Drain any excess fat.
- Stir in the ranch seasoning mix, ensuring the beef is evenly coated.
- In a large baking dish, combine the browned beef, uncooked rice, beef broth, sweet corn, salt, and pepper.
- Mix everything together until well combined.
- Cover the dish with aluminum foil and bake for 25-30 minutes, or until the rice is tender and has absorbed most of the liquid.
- Remove the foil, sprinkle shredded cheese on top, and return it to the oven for an additional 5-10 minutes until the cheese is melted and bubbly.
- Serve warm and enjoy!
