  • 1 cup uncooked rice (any variety)
  • 2 cups beef broth
  • 1 cup sweet corn (frozen or canned)
  • 1 packet ranch seasoning mix
  • 1 cup shredded cheese (cheddar or your choice)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, brown the ground beef over medium heat. Drain any excess fat.
  3. Stir in the ranch seasoning mix, ensuring the beef is evenly coated.
  4. In a large baking dish, combine the browned beef, uncooked rice, beef broth, sweet corn, salt, and pepper.
  5. Mix everything together until well combined.
  6. Cover the dish with aluminum foil and bake for 25-30 minutes, or until the rice is tender and has absorbed most of the liquid.
  7. Remove the foil, sprinkle shredded cheese on top, and return it to the oven for an additional 5-10 minutes until the cheese is melted and bubbly.
  8. Serve warm and enjoy!
