  • 1 can red enchilada sauce
  • 8 corn tortillas
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 can black beans (rinsed and drained)
  • 1 cup corn (frozen or canned)
  • 1 onion (chopped)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Chopped cilantro (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Heat olive oil in a skillet over medium heat, then sauté the chopped onion until it turns translucent.
  3. Add ground beef to the skillet, cooking it until browned. Season with salt and pepper for flavor.
  4. Mix in black beans, corn, and half of the enchilada sauce until combined.
  5. In a baking dish, layer 3 corn tortillas, followed by half of the beef mixture, and a third of the cheese.
  6. Repeat layers, finishing with tortillas on top, the remaining enchilada sauce, and cheese.
  7. Cover the dish with foil and bake for 20 minutes. Then, uncover and bake for an additional 10 minutes until the cheese is bubbly and lightly browned.
  8. Garnish with chopped cilantro right before serving for a fresh pop of flavor.

Notes

For best results, let the casserole sit for a few minutes after baking for easier serving. Serve with sour cream, guacamole, or a side salad.
