- 1 can red enchilada sauce
- 8 corn tortillas
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 can black beans (rinsed and drained)
- 1 cup corn (frozen or canned)
- 1 onion (chopped)
- 1 tablespoon olive oil
- Salt and pepper to taste
- Chopped cilantro (for garnish)
Instructions
- Preheat your oven to 350°F (175°C).
- Heat olive oil in a skillet over medium heat, then sauté the chopped onion until it turns translucent.
- Add ground beef to the skillet, cooking it until browned. Season with salt and pepper for flavor.
- Mix in black beans, corn, and half of the enchilada sauce until combined.
- In a baking dish, layer 3 corn tortillas, followed by half of the beef mixture, and a third of the cheese.
- Repeat layers, finishing with tortillas on top, the remaining enchilada sauce, and cheese.
- Cover the dish with foil and bake for 20 minutes. Then, uncover and bake for an additional 10 minutes until the cheese is bubbly and lightly browned.
- Garnish with chopped cilantro right before serving for a fresh pop of flavor.
Notes
For best results, let the casserole sit for a few minutes after baking for easier serving. Serve with sour cream, guacamole, or a side salad.
