Description

A hearty Beef Enchilada Casserole that’s perfect for busy weeknights and family gatherings, featuring layers of seasoned beef, creamy cheese, and zesty enchilada sauce wrapped in corn tortillas.


Ingredients

  • 1 lb ground beef
  • 1 can (10 oz) red enchilada sauce
  • 8 corn tortillas
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn (canned or frozen)
  • 1 onion, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, cook the ground beef and chopped onion until the beef is browned, then drain any excess fat.
  3. Stir in the red enchilada sauce, black beans, corn, garlic powder, cumin, salt, and pepper until well combined.
  4. Grease a 9×13 inch baking dish and layer 4 corn tortillas on the bottom.
  5. Spread half of the beef mixture over the tortillas, then sprinkle with half of the shredded cheese.
  6. Repeat the layering with another 4 tortillas, followed by the remaining beef mixture and cheese.
  7. Finish with a layer of tortillas and top with any remaining cheese.
  8. Cover the dish with foil and bake for 20 minutes.
  9. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
  10. Let it stand for 5 minutes before serving.

Notes

Serve with a fresh side salad, guacamole, or sour cream for an elevated meal. Store leftovers in an airtight container for up to 3-4 days, or freeze for 2-3 months.
