A hearty Beef Enchilada Casserole that’s perfect for busy weeknights and family gatherings, featuring layers of seasoned beef, creamy cheese, and zesty enchilada sauce wrapped in corn tortillas.

			- 1 lb ground beef
 - 1 can (10 oz) red enchilada sauce
 - 8 corn tortillas
 - 1 cup shredded cheese (cheddar or Mexican blend)
 - 1 can (15 oz) black beans, drained and rinsed
 - 1 cup corn (canned or frozen)
 - 1 onion, chopped
 - 1 teaspoon garlic powder
 - 1 teaspoon cumin
 - Salt and pepper to taste
 
Instructions
- Preheat your oven to 350°F (175°C).
 - In a large skillet over medium heat, cook the ground beef and chopped onion until the beef is browned, then drain any excess fat.
 - Stir in the red enchilada sauce, black beans, corn, garlic powder, cumin, salt, and pepper until well combined.
 - Grease a 9×13 inch baking dish and layer 4 corn tortillas on the bottom.
 - Spread half of the beef mixture over the tortillas, then sprinkle with half of the shredded cheese.
 - Repeat the layering with another 4 tortillas, followed by the remaining beef mixture and cheese.
 - Finish with a layer of tortillas and top with any remaining cheese.
 - Cover the dish with foil and bake for 20 minutes.
 - Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
 - Let it stand for 5 minutes before serving.
 
Notes
Serve with a fresh side salad, guacamole, or sour cream for an elevated meal. Store leftovers in an airtight container for up to 3-4 days, or freeze for 2-3 months.
