- 1 lb beef liver
- 2 large onions, sliced
- 1 cup beef broth
- 1/2 cup all-purpose flour (or gluten-free alternative)
- 2 tablespoons butter
- 2 tablespoons olive oil
- Salt and pepper to taste
- Mashed potatoes or roasted vegetables for serving
Instructions
- Rinse the beef liver under cold water and pat it dry with a paper towel. Season both sides with salt and pepper, then dredge it in flour.
- In a large skillet, heat the olive oil and butter over medium heat until bubbly.
- Add the sliced onions to the skillet, stirring occasionally until they caramelize, about 10-15 minutes.
- Once caramelized, remove the onions from the skillet and set aside.
- In the same skillet, add the beef liver. Cook for about 3-4 minutes on each side until browned and just cooked through.
- Remove the liver from the pan and set it aside.
- Pour in the beef broth, bringing it to a simmer and scraping the bottom of the skillet to incorporate any browned bits.
- Return the caramelized onions to the skillet and stir to combine, letting them simmer briefly.
- Serve the liver topped with the onion gravy alongside mashed potatoes or roasted vegetables.
Notes
Allow any leftovers to cool before storing in an airtight container. Refrigerate for up to 3 days or freeze for 2-3 months.
