  • 1 lb beef liver
  • 2 large onions, sliced
  • 1 cup beef broth
  • 1/2 cup all-purpose flour (or gluten-free alternative)
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Mashed potatoes or roasted vegetables for serving

Instructions

  1. Rinse the beef liver under cold water and pat it dry with a paper towel. Season both sides with salt and pepper, then dredge it in flour.
  2. In a large skillet, heat the olive oil and butter over medium heat until bubbly.
  3. Add the sliced onions to the skillet, stirring occasionally until they caramelize, about 10-15 minutes.
  4. Once caramelized, remove the onions from the skillet and set aside.
  5. In the same skillet, add the beef liver. Cook for about 3-4 minutes on each side until browned and just cooked through.
  6. Remove the liver from the pan and set it aside.
  7. Pour in the beef broth, bringing it to a simmer and scraping the bottom of the skillet to incorporate any browned bits.
  8. Return the caramelized onions to the skillet and stir to combine, letting them simmer briefly.
  9. Serve the liver topped with the onion gravy alongside mashed potatoes or roasted vegetables.

Notes

Allow any leftovers to cool before storing in an airtight container. Refrigerate for up to 3 days or freeze for 2-3 months.
