- 4–5 potatoes, chopped

- 2 tablespoons olive oil
Instructions
- Season the beef: Rub the beef roast with salt, pepper, and thyme.
- Brown the meat: Heat olive oil in a skillet. Sear the beef for about 3-4 minutes on each side until a nice brown crust forms.
- Prepare the pot: Transfer the beef roast to your slow cooker or pot. Surround it with the chopped carrots, potatoes, onion, and minced garlic.
- Add the liquid: Pour beef broth over the roast and vegetables.
- Cook: For slow cooker, cook on low for 480 minutes or high for 240 minutes. For the oven method, cover and bake at 325°F for 180-240 minutes.
- Serve: Once tender, serve warm, ensuring everyone gets a share of both beef and vegetables.
